The ripe fruit is said to be useful in hiccup and affections of the throat. The leaves are aromatic and carminative. The scooped-out pulp from its fruits is eaten raw with or without sugar, or is blended with coconut milk and palm-sugar syrup and drunk as a beverage, or frozen as an ice cream. It is also used in chutneys and for making jelly and jam. The fruit is much used in India as a liver and cardiac tonic, and, when unripe, as an astringent means of halting diarrhea and dysentery and effective treatment for hiccough, sore throat and diseases of the gums. The pulp is poulticed onto bites and stings of venomous insects, as is the powdered rind. Leaves, bark, roots and fruit pulp are all used against snakebite.
The fruit is eaten plain, mixed into a variety of beverages and desserts, or preserved as jam. The rind of the fruit is so thick and hard it can be carved and used as a utensil such as a bowl or ashtray. The bark also produces an edible gum. The tree has hard wood which can be used for woodworking. This species has numerous described medicinal uses as well. Ground limonia bark is also used as a cosmetic called thanakha in Southeast Asia.

THE YAJUR VEDA mentions the bael tree, but the Charaka Samhita, an Ayurveda treatise from the 1st millennium BC, was the first book to describe its medicinal properties. Hindu scriptures abound in references to the bael tree and its leaves. The devotees of Lord Shiva commonly offer bael leaves to the deity, especially on Shivaratri; this probably explains why bael trees are so common near temples. Hindus also believe that goddess Lakshmi resides in bael leaves.

As food: Indonesians beat the pulp of the ripe fruit with palm sugar and eat the mixture at breakfast. The sweetened pulp is a source of sherbet in the subcontinent. Jam, pickle, marmalade, syrup, jelly, squash and toffee are some of the products of this versatile fruit. Young bael leaves are a salad green in Thailand. Indians eat the pulp of the ripe fruit with sugar or jaggery. The ripe pulp is also used to make chutney. The Raw pulp is mixed with yoghurt and make into raita. The raw pulp is sour in taste, while the ripe pulp would be having a smell and thaste thats mixture of sourness and sweet.

Other uses: Bael fruit pulp has a soap-like action that made it a household cleaner for hundreds of years. The sticky layer around the unripe seeds is household glue that also finds use in jewellery-making. The glue, mixed with lime, waterproofs wells and cements walls. The glue also protects oil paintings when added as a coat on the canvas. The fruit rind yields oil that is popular as a fragrance for hair; it also produces a dye used to colour silks and calico.

Nutrition: A hundred gm of bael fruit pulp contains 31 gm of carbohydrate and two gm of protein, which adds up to nearly 140 calories. The ripe fruit is rich in beta-carotene, a precursor of Vitamin A; it also contains significant quantities of the B vitamins thiamine and riboflavin, and small amounts of Vitamin C. Wild bael fruit tends to have more tannin than the cultivated ones; tannin depletes the body of precious nutrients, and evidence suggests it can cause cancer.

Medicinal uses: The bael fruit is more popular as medicine than as food. The tannin in bael has an astringent effect that once led to its use as a general tonic and as a traditional cure for dysentery, diarrhoea, liver ailments, chronic cough and indigestion. In fact, Vasco da Gama's men, suffering from diarrhoea and dysentery in India, turned to the bael fruit for relief. The root juice was once popular as a remedy for snakebites.
The seed oil is a purgative, and the leaf juice mixed with honey is a folk remedy for fever. The tannin-rich and alkaloid-rich bark decoction is a folk cure for malaria.

The watermelon fruit, loosely considered a type of melon (although not in the genus Cucumis), has a smooth exterior rind (green, yellow, and sometimes white) and a juicy, sweet interior flesh (usually pink, but sometimes orange, yellow, red, and sometimes green if not ripe).

History and Nutrition of Watermelon

HistoryWatermelon is thought to have originated in southern Africa, where it is found growing wild, because it reaches maximum genetic diversity resulting in sweet, bland and bitter forms there. By the 10th century AD, watermelons were being cultivated in China, which is today the world's single largest watermelon producer. In Vietnam, legend holds that watermelon was discovered in Vietnam long before it reached China, in the era of the Hùng Kings. According to legend, watermelon was discovered by Prince Mai An Tiêm, an adopted son of the 11th Hùng King. When he was exiled unjustly to an island, he was told that if he could survive for six months, he would be allowed to return. When he prayed for guidance, a bird flew past and dropped a seed. He cultivated the seed and called its fruit "dua tây" or western melon, because the birds who ate it flew from the west. When the Chinese took over Vietnam in about 110 BC, they called the melons "dua h?o" (good melon) or "dua h?u", "dua Tây", "dua h?o", "dua h?u"—all words for "watermelon". An Tiêm's island is now a peninsula in the suburban district of Nga Son.

Early French explorers found Native Americans cultivating the fruit in the Mississippi Valley. Many sources list the watermelon as being introduced in Massachusetts as early as 1629. Southern food historian John Egerton has said he believes African slaves helped introduce the watermelon to the United States. Texas Agricultural Extension horticulturalist Jerry Parsons lists African slaves and European colonists as having distributed watermelons to many areas of the world. Parsons also mentions the crop being farmed by Native Americans in Florida (by 1664) and the Colorado River area (by 1799). Other early watermelon sightings include the Midwestern states (1673), Connecticut (1747), and the Illiana region (1822).

Charles Fredric Andrus, a horticulturist at the USDA Vegetable Breeding Laboratory in Charleston, South Carolina, set out to produce a disease-resistant and wilt-resistant watermelon. The result was "that gray melon from Charleston." Its oblong shape and hard rind made it easy to stack and ship. Its adaptability meant it could be grown over a wide geographical area. It produced high yields and was resistant to the most serious watermelon diseases: anthracnose and fusarium wilt.

This now-common watermelon is often large enough that groceries often sell half or quarter melons. There are also some smaller, spherical varieties of watermelon, both red- and yellow-fleshed, sometimes called "icebox melons."
In Japan, farmers of the Zentsuji region found a way to grow cubic watermelons, by growing the fruits in glass boxes and letting them naturally assume the shape of the receptacle. The square shape is designed to make the melons easier to stack and store, but the square watermelons are often more than double the price of normal ones. Pyramid shaped watermelons have also been developed and any polygonal shape may potentially also be used.

The amino acid citrulline was first extracted from watermelon and analysed.[9] Watermelons contain a significant amount of citrulline and after consumption of several kg an elevated concentration is measured in the blood plasma; this could be mistaken for citrullinaemia or other urea cycle disorder.

Watermelon rinds are also edible, and sometimes used as a vegetable. In China, they are stir-fried, stewed, or more often pickled. When stir-fried, the de-skinned and de-fruited rind is cooked with olive oil, garlic, chili peppers, scallions, sugar and rum. Pickled watermelon rind is also commonly consumed in the Southern US, Russia, Ukraine, Romania and Bulgaria.[citation needed] In the Balkans, especially Serbia, watermelon slatko is also popular.[13] Watermelon juice can also be
made into wine.

Varieties of Watermelon fruits

Watermelon with yellow fleshThere are more than twelve hundred varieties of watermelon ranging in size from less than a pound, to more than two hundred pounds with flesh that is red, orange, yellow, or white. Several notable varieties are included here.

Carolina Cross: This variety of watermelon produced the current world record watermelon weighing 262 pounds (119 kg). It has green skin, red flesh and commonly produces fruit between 65 and 150 pounds (29 and 68 kg). It takes about 90 days from planting to harvest. Yellow Crimson Watermelon: variety of watermelon that has a yellow colored flesh.
This particular type of watermelon has been described as "sweeter" and more "honey" flavored than the more popular red flesh watermelon. Orangeglo: This variety has a very sweet orange pulp, and is a large oblong fruit weighing 9–14 kg (20-30 pounds). It has a light green rind with jagged dark green stripes. It takes about 90–100 days from planting to harvest. The Moon and Stars variety of watermelon has been around since 1926. The rind is purple/black and has many small yellow circles (stars) and one or two large yellow circles (moon). The melon weighs 9–23 kg (20-50 pounds). The flesh is pink or red and has brown seeds.
The foliage is also spotted. The time from planting to harvest is about 90 days.[25] Cream of Saskatchewan: This variety consists of small round fruits, around 25 cm (10 inches) in diameter. It has a quite thin, light green with dark green striped rind, with sweet white flesh and black seeds. It can grow well in cool climates. It was originally brought to Saskatchewan, Canada by Russian immigrants. These melons take 80–85 days from planting to harvest.
Watermelon output in 2005Melitopolski: This variety has small round fruits roughly 28–30 cm (11-12 inches) in diameter. It is an early ripening variety that originated from the Volga River region of Russia, an area known for cultivation of watermelons. The Melitopolski watermelons are seen piled high by vendors in Moscow in summer. This variety takes around 95 days from planting to harvest.
Densuke Watermelon: This variety has round fruit up to 25 lb (11 kg). The rind is black with no stripes or spots. It is only grown on the island of Hokkaido, Japan, where up to 10 000 watermelons are produced every year. In June 2008, one of the first harvested watermelons was sold at an auction for 650 000 yen (6300 USD), making the most expensive watermelon ever sold. Stereotypical caricatures may depict African Americans as being inordinately fond of watermelon. The Oklahoma State Senate passed a bill on 17 April 2007 declaring watermelon as the official state vegetable, with some controversy as the watermelon is a fruit. The citrulline which exists in watermelon (especially in the rind) is a known stimulator of nitric oxide. Nitric oxide is thought to relax and expand blood vessels, much like the erectile dysfunction drug Viagra, and may even increase libido. Fans of the Saskatchewan Roughriders of the CFL started a tradition of hollowing out a watermelon and wearing it as a makeshift football helmet (the color of the Roughriders is green).
During the 2009 Grey Cup in Calgary (between the Montreal Alouettes and the Roughriders, thousands of watermelons had to be imported to Calgary supermarkets to prevent a shortage being caused by Rider fans. The town of Chinchilla in Queensland, Australia holds a biannual festival celebrating all things melon.

colloquially known simply as "the mangosteen", is a tropical evergreen tree, believed to have originated in the Sunda Islands and the Moluccas of Indonesia. The tree grows from 7 to 25 m (20–80 ft) tall. The rind (exocarp) of the edible fruit is deep reddish purple when ripe. Botanically an aril, the fragrant edible flesh can be described as sweet and tangy, citrusy with peach flavor and texture.
The Purple Mangosteen belongs to the same genus as the other — less widely known — mangosteens, such as the Button Mangosteen (G. prainiana) or the Lemondrop Mangosteen (G. madruno).

Taxonomy of Mangosteen Fruit

A description of mangosteen was included in the Species Plantarum by Linnaeus in 1753.
Maturation of the exocarp and edible arilThe juvenile mangosteen fruit, which does not require fertilization to form (see agamospermy), first appears as pale green or almost white in the shade of the canopy. As the fruit enlarges over the next two to three months, the exocarp color deepens to darker green. During this period, the fruit increases in size until its exocarp is 6–8 centimeters in outside diameter, remaining hard until a final, abrupt ripening stage.

The subsurface chemistry of the mangosteen exocarp comprises an array of polyphenolic acids including xanthones and tannins that assure astringency which discourages infestation by insects, fungi, plant viruses, bacteria and animal predation while the fruit is immature. Color changes and softening of the exocarp are natural processes of ripening that indicates the fruit can be eaten and the seeds are finished developing.

Mangosteen produces a recalcitrant seed and must be kept moist to remain viable until germination. Mangosteen seeds are nucellar in origin and not the result of fertilization; they germinate as soon as they are removed from the fruit and die quickly if allowed to dry.

Once the developing mangosteen fruit has stopped expanding, chlorophyll synthesis slows as the next color phase begins. Initially streaked with red, the exocarp pigmentation transitions from green to red to dark purple, indicating a final ripening stage. This entire process takes place over a period of ten days as the edible quality of the fruit peaks.

Over days following removal from the tree, the exocarp hardens to an extent depending upon post-harvest handling and ambient storage conditions, especially humidity. If the ambient humidity is high, exocarp hardening may take a week or longer when the aril quality is peaking and excellent for consumption. However, after several additional days of storage, especially if unrefrigerated, the arils inside the fruit might spoil without any obvious external indications. Using hardness of the rind as an indicator of freshness for the first two weeks following harvest is therefore unreliable because the rind does not accurately reveal the interior condition of the arils. If the exocarp is soft and yielding as it is when ripe and fresh from the tree, the fruit is usually good.

The edible endocarp of the mangosteen is botanically defined as an aril with the same shape and size as a tangerine 4–6 centimeters in diameter, but is white. The circle of wedge-shaped arils contains 4–8 segments, the larger ones harboring apomictic seeds that are unpalatable unless roasted.

Often described as a subtle delicacy, the arils bear an exceptionally mild aroma, quantitatively having about 400 times fewer chemical constituents than fragrant fruits, explaining its relative mildness. Main volatile components having caramel, grass and butter notes as part of the mangosteen fragrance are hexyl acetate, hexenol and a-copaene.

On the bottom of the exocarp, raised ridges (remnants of the stigma), arranged like spokes of a wheel, correspond to the number of aril sections. Mangosteens reach fruit-bearing in as little as 5–6 years, but more typically require 8–10 years.

The aril is the flavorful part of the fruit but, when analyzed specifically for its nutrient content, the mangosteen aril only meets the first criterion above, as its overall nutrient profile is absent of important content.

Some mangosteen juice products contain whole fruit purée or polyphenols extracted from the inedible exocarp (rind) as a formulation strategy to add phytochemical value. The resulting juice has purple color and astringency derived from exocarp pigments, including xanthones under study for potential anti-disease effects. The potential health benefits of xanthones were debated in a four-part series in 2009.

Other authors proposed that alpha-mangostin, a xanthone, could stimulate apoptosis in leukemia cells in vitro.

Furthermore, a possible adverse effect may occur from chronic consumption of mangosteen juice containing xanthones. A 2008 medical case report described a patient with severe acidosis possibly attributable to a year of daily use (to lose weight, dose not described) of mangosteen juice infused with tannins.

Mangosteen and its related products, such as juices and nutritional supplements, are legally imported into the United States, which had an import ban until 2007.

Without fumigation or irradiation as fresh fruit, mangosteens have historically been illegal for importation in commercial volumes into the United States due to fears that they harbor the Asian fruit fly, which would endanger U.S. crops. To open a mangosteen, the shell is usually scored first with a knife; one holds the fruit in both hands, prying gently along the score with the thumbs until the rind cracks. It is then easy to pull the halves apart along the crack and remove the fruit. Rarely in ripe fruits, the purple exocarp juice may stain skin or fabric.

The grapefruit is a subtropical citrus tree known for its sour fruit, an 18th-century hybrid first bred in Jamaica. When found in Barbados it was named the "forbidden fruit"; it is also called the "shaddock", after its creator.

These evergreen trees are usually found at around 5–6 metres (16–20 ft) tall, although they can reach 13–15 metres (43–49 ft). The leaves are dark green, long (up to 150 mm, or 6 inches) and thin. It produces 5 cm (2 in) white four-petaled flowers. The fruit is yellow-orange skinned and largely oblate, and ranges in diameter from 10–15 cm. The flesh is segmented and acidic, varying in color depending on the cultivars, which include white, pink and red pulps of varying sweetness. The 1929 US Ruby Red (of the Redblush variety) has the first grapefruit patent.

The fruit has only become popular from the late 19th century; before that it was only grown as an ornamental plant. The US quickly became a major producer of the fruit, with orchards in Florida, Texas, Arizona, and California. In Spanish, the fruit is known as toronja or pomelo.
History

One ancestor was the Jamaican sweet orange (Citrus sinensis); the other was the Indonesian pomelo (Citrus maxima). Captain Shaddock brought pomelo seeds to Jamaica and bred the first fruit.

The hybrid fruit was in 1750 documented by the Rev. Griffith Hughes describing specimens from Barbados. Currently, the grapefruit is said to be one of the "Seven Wonders of Barbados. It was brought to Florida by Count Odette Philippe in 1823 in what is now known as Safety Harbor. Further crosses have produced the tangelo (1905), the minneola (1931), and the sweetie (1984). The sweetie has very small genetic and other differences from pomelo.

The grapefruit was known as the shaddock or shattuck until the 1800s. Its current name alludes to clusters of the fruit on the tree, which often appear similar to grapes. Botanically, it was not distinguished from the pomelo until the 1830s, when it was given the name Citrus paradisi. Its true origins were not determined until the 1940s. This led to the official name being altered to Citrus × paradisi.

The 1929 Ruby Red patent was associated with real commercial success, which came after the discovery of a red grapefruit growing on a pink variety. Only with the introduction of the Ruby Red did the grapefruit transform into a real agricultural success. The Red grapefruit, starting with the Ruby Red, has even become a symbolic fruit of Texas, where white "inferior" grapefruit were eliminated and only red grapefruit were grown for decades. Using radiation to trigger mutations, new varieties were developed to retain the red tones which typically faded to pink,[9] the Rio Red variety is the current (2007) Texas grapefruit with registered trademarks Rio Star and Ruby-Sweet, also sometimes promoted as "Reddest" and "Texas Choice".

The Florida Department of Citrus stated "the primary varieties of Florida grapefruit are Ruby Red, Pink, Thompson, Marsh and Duncan. The fresh grapefruit season typically runs from October through June.

Grapefruit comes in many varieties, determinable by color, which is caused by the pigmentation of the fruit in respect of both its state of ripeness and genetic bent. the most popular varieties cultivated today are red, white, and pink hues, referring to the internal pulp color of the fruit. The family of flavors range from highly acidic and somewhat bitter to sweet and tart. Grapefruit mercaptan, a sulfur-containing terpene, is one of the substances which has a strong influence on the taste and odor of grapefruit, compared with other citrus fruits.

Grapefruit can have a number of interactions with drugs, often increasing the effective potency of compounds. Grapefruit contains naringin, bergamottin and dihydroxybergamottin, which inhibit the protein isoform CYP3A4 predominately in the small intestine, but at higher doses, hepatic CYP3A4 inhibition is present as well. It is via inhibition of this enzyme that grapefruit increases the effects of a variety of drugs by increasing their bioavailability.The effect of grapefruit juice with regard to drug absorption was originally discovered in 1989. However, the effect became well-publicized after being responsible for a number of deaths due to overdosing on medication.

Grapefruit juice may be the first documented, but apple and orange juices have been also implicated in interfering with etoposide, a chemotherapy drug, some beta blocker drugs used to treat high blood pressure, and cyclosporine, taken by transplant patients to prevent rejection of their new organs.

Unlike other fruits grapefruit contains a large amount of naringin, and it can take up to 72 hours before the effects of the naringin on the CYP3A4 enzyme are seen. This is particularly problematic due to the fact that only 4 oz of grapefruit contain enough naringin to inhibit substrates of CYP3A4.

Grapefruit is an excellent source of many nutrients and phytochemicals that contribute to a healthy diet. Grapefruit is a good source of vitamin C, contain the fiber pectin, and the pink and red hues contain the beneficial antioxidant lycopene. Studies have shown grapefruit helps lower cholesterol and there is evidence that the seeds have antioxidant properties. Grapefruit forms a core part of the "grapefruit diet", the theory being that the fruit's low glycemic index is able to help the body's metabolism burn fat.

Grapefruit seed extract (GSE) has been claimed to have strong antimicrobial properties, with proven activity against bacteria and fungi. However, no studies have demonstrated any efficacy by GSE as an antimicrobial for either bacteria or fungi. Additionally, although GSE is promoted as a highly effective plant-based preservative by some natural personal care manufacturers, studies have shown that the apparent antimicrobial activity associated with GSE preparations is merely due to contamination with synthetic preservatives.

Since grapefruit juice is known to inhibit enzymes necessary for the clearance of some drugs and hormones, some have hypothesized that grapefruit juice may play a indirect role in the development of hormone-dependent cancers. A 2007 study found a correlation between eating a quarter of grapefruit daily and a 30% increase in risk for breast cancer in post-menopausal women. The study points to the inhibition of CYP3A4 enzyme by grapefruit, which metabolizes estrogen. However, a 2008 study have shown that grapefruit consumption does not increase breast cancer risk and have found a significant decrease in breast cancer risk with greater intake of grapefruit in women who never used hormone therapy.

Grapefruit contains spermidine - a simple linear molecule found in large quantities. It is known to be necessary for cell growth and maturation, and as cells age their level of spermidine is know to fall. Now, Frank Madeo from the University of Graz in Austria and his colleagues have shown that simply feeding certain organisms and cells with the molecule significantly increases their lifespan. Scientists have shown that feeding a simple polyamine called spermidine to worms, fruit flies and yeast significantly prolongs their lifespan. In addition, adding spermidine to the diet of mice decreased molecular markers of ageing, and when human immune cells were cultured in a medium containing spermidine, they also lived for longer.

In Costa Rica, especially in Atenas, grapefruits are often cooked to remove their sourness, rendering them as sweets; they are also stuffed with dulce de leche, resulting in a dessert called toronja rellena (stuffed grapefruit).

Other uses

Grapefruit peel oil is used in aromatherapy and it is historically known for its aroma.

Grapefruit has also been investigated in cancer medicine pharmacodynamics. Its inhibiting effect on the metabolism of some drugs may allow smaller doses to be used, which can help to reduce costs.

The papaya (from Carib via Spanish) is the fruit of the plant Carica papaya, in the genus Carica. It is native to the tropics of the Americas, and was first cultivated in Mexico several centuries before the emergence of the Mesoamerican classic cultures. It is often called a "paw paw" or a "big melon" but the North American pawpaw is a different species, in the genus Asimina.

It is a large tree-like plant, with a single stem growing from 5 to 10 metres (16 to 33 ft) tall, with spirally arranged leaves confined to the top of the trunk. The lower trunk is conspicuously scarred where leaves and fruit were borne. The leaves are large, 50–70 centimetres (20–28 in) diameter, deeply palmately lobed with 7 lobes. The tree is usually unbranched if unlopped. The flowers are similar in shape to the flowers of the Plumeria but are much smaller and wax-like. They appear on the axils of the leaves, maturing into the large 15–45 centimetres (5.9–18 in) long, 10–30 centimetres (3.9–12 in) diameter fruit. The fruit is ripe when it feels soft (like a ripe avocado or a bit softer) and its skin has attained an amber to orange hue.

It is the first fruit tree to have its genome deciphered.

Originally from southern Mexico, particularly Chiapas and Veracruz, Central America and northern South America, the papaya is now cultivated in most tropical countries, such as Brazil, Pakistan, India, Indonesia, South Africa, Sri Lanka, Vietnam, Jamaica.

The papaya fruit is susceptible to the Papaya Fruit Fly. This wasp-like fly lays its eggs in young fruit. In cultivation it grows rapidly fruiting within 3 years, however it is highly frost sensitive.

In the 1990s, two varieties of papaya, SunUp and Rainbow, that had been genetically-modified to be resistant to the papaya ring spot virus, were introduced into Hawaii. By 2004, non-genetically modified and organic papayas throughout Hawaii had experienced hybridization with the genetically-modified varieties.

Uses

Papaya has many uses, including as food, as cooking aid, in medicine. The stem and the bark are also used in rope production.

Gastronomy

The ripe fruit is usually eaten raw, without skin or seeds. The unripe green fruit of papaya can be eaten cooked, usually in curries, salads and stews. It has a relatively high amount of pectin, which can be used to make jellies.
